Wolf was a dragon's prisoner. A pet, if you will. And the only way he survived was by entertaining the dragon with stories. He was kept there for seven years, and when the dragon finally died, it was selfish and wanted no one else to ever hear his stories, so he was cursed with a curse so strong not even Elan could sense it (because it was hidden so well) that turned him into a wolf until he found his soul mate. But he can't tell Elan that, because how weird would that be to tell someone "Oh yeah, I've been a wolf for about three hundred years because I haven't found my soul mate and the only reason I'm a man now is because you came along. Surprise! Oh but by the way, if you leave I die. Sooo....what's for supper?" So if he leaves her side for any extended length of time he dies. If he isn't physically touching her he is in constant pain. He is a wolf by day and a man by night, the curse never completely lifted because of how strong the dragon's magic was and how long Wolf waited. If he were to turn completely into a man now he would revert to his original age, over 330 years old. So to stabilize his age the magic has adjusted itself and continues to do so as he and his conditions change. For example, once he takes Elan as his wife, he will be able to turn from wolf to man freely as he wishes, but if he stays a man too long his body will revert back to the wolf for a time (the way a body collapses when it needs to sleep).
