Baked Apple Chicken
Alright, something that's not a cookie, in fact it's not even a dessert! How about that?! It's my famous--ok maybe not--Baked Apple Chicken! Applause? No? Okay. Well this came about late one night when I had chicken I needed to cook but nothing, and I mean nothing else to cook it with but apples...so I got very creative and it payed off. 4laugh

Baked Apple Chicken

-2-3 Boneless, skinless chicken breasts
-2 large baking apples*, sliced thin
-1 Yellow onion, diced
-½ cup of Water
-Paprika, salt and pepper to taste

Preheat oven to 400 degrees

Start by pouring water into a deep oven safe glass dish, then put the chicken in. (Note: the water should not cover the chicken) Then put the spices on, followed by onions—which should be layered on liberally over all pieces of chicken. Finally, put the apple slices over the chicken, they should be layered overlapping, covering all of the chicken.

Cover the dish with foil and put in the oven for 30-40 minutes, or until the chicken is cooked through.

(*Note: About baking apples, this is very important. You should not substitute for any other sort of apple, this includes granny smith—even though they are baking apples. It’s just if you use any other sort of apple the dish comes out cloyingly sweet and the first couple bites are really good, then you start to ask yourself why your chicken tastes like cotton candy but, if you like that then by all means…use a sweeter apple. sweatdrop )

When you’re done with the dish, and the chicken is cooked, and the apples and onions are cooked, there should be delicious tasting drippings at the bottom of your pan. You should use that to make gravy; trust me it will be delicious.


Apple and Onion Gravy

-Drippings from your dish
-¼ of Water
-1 tablespoon of cornstarch (or flour)

Separate drippings from onions and apples, and mix with water in a pan. Wait for boil.
In a cup add cornstarch and a little water mix; pour into the pan as it boils. Stir as it thickens. Take of heat and enjoy.

Well…there you have it: Baked Apple Chicken, with optional gravy if you’re into that. The chicken tastes great with rice.
