I was looking around for something sweet to chew on yesterday, but we didn't have any fruit besides rotten apples and frozen peaches [[ gonk ]]. I went for the peaches. I was checking the calories [[force of habit, haven't got a clue how or where it started sweatdrop ]] && noticed this cake recipe on the back. I made it and it was delicious! it's very much vegan, && even my totally non-veggie family adored it. very easy to prepare but a long cooktime. && if you arrange the peaches right, it looks pretty too. blaugh
ingredients;
¼ pound/one stick of butter or margarine, cut into pieces
2 cups all-purpose flours [[wheat flour works too]]
2 cups sugar
½ teaspoon salt
4 teaspoon baking powder
1½ cup whole or low-fat milk [[vegan milks should work fine]]
1 package/16 ounces frozen Safeway Sliced Peaches, not defrosted
[[also, if you're nonvegan, whipped cream or frosting would probably taste good - personally, I served it plain because whipped cream makes me feel sick and I'm a horrible froster xd ]]
how-to;
preheat oven to 350 degrees F. put butter in baking dish [[preferably 9 x 13 inches]]; place in over until melted. in a large bowl, stir together flour, sugar, salt, && baking powder. stir in milk until smooth. pour batter over melted butter. push batter into the corners of the pan. arrange peaches over batter. bake for 50 minutes or until golden brown. let sit 2-5 minutes after taking out of the oven. makes 12 servings.
