The entire point of any writing is to explore things that we wouldn't do in real life. Most the time in fanfiction, odd pairings are written for the squick factor, to watch how people react to it, to have a good laugh.
But sometimes, Padfoot/Remus (Padfoot being Sirius in dog form) or Harry/Moony (werewolf), or ferret!Draco/Somebody or GiantSquid/Somebody, or rape is used not as a "hahah that's funny" but a reflection of a fantasy.
Many people are intrigued by the idea of beastiality. They would never do it themselves, they'd rather not watch some woman with fake breasts and hair and too much makeup do it, but they're interested, so when they find fics that have beastiality in it, it intrigues them. They become turned on because it's presented in a way that is not "disgusting" or "wrong" or done for a few bucks on the side. The human character has the same emotions they feel in first time beast fics, or the description of the act is enough for the reader. Sometimes it turns them away if it's an accurate fic (anybody who has so much as glanced at a dog p***s or a horse p***s will be able to tell it's no ******** ride in the park), sometimes it turns them more on to the idea, or at least assure them that they are not disgusting freaks--other people think about it, even do it, too. Not to say every person who reads/writes a beast fic will go and ******** a dog, but they won't feel as terrible about it, and the stories act as a safe outlet for such feelings (masturbate to the stories, far less dangerous then trying to get your dog to mount you--that could have some nasty side effects).
Rape is actually a huge kink in the BDSM community. Not rape so much as the idea of it. Two consenting partners have signals and words. Then, lets say one comes home from work and gets strangled. Their attacker says one word, moves their hand in a certain way, and the "victim" relaxes and has a chance to do the same to either back out or continue on. From then on out, the aggresor does what they please. Stories with rape in it, or just centered on rape, is usually read by people who have that kink. They get involved in the story, put themselves in the characters place--it's a safe situation without the concious actively knowing "Oh it's just my boyfriend/girlfriend playing a kinky sex game with me" Because let's face it--nobody actually wants to get raped.
Rape fics are also great for victims. A character to share their pain with, to come to terms to what happened to them. Or for people to understand what happens to a rape victim (assuming it's well written, again), to explore the emotions involved.
The same goes for incest. A safe outlet for a not so safe idea. Many people have fleeting fantasies of what it'd be like with their siblings. Just a thought, not something they'd act on, but an idea. Sometimes not even leaving their subconcious. Stories written with things like that are safe outlets to explore that subconcious, to explore that desire, to realize, as you get reviews or as you read it, that you are not alone in your 2 second fantasy.
People write to express, and people read to find some one who understands them. That is why a lot of people write and read beastiality, rape, incest, tentacle porn, etc.
Then again, there are the people who write Dumbledore/Hagrid just to get a reaction out of people. But you know. You just got to let them do their thing. It's funny when you're bored.

I agree with most of what you say, and after I thought about my question essentially I drew the same same conclusions. I just - I dunno, I can't explain.
