Midnight Cake
Ingredients:
2 1/4 cups whole wheat flour 1 2/3 cups vegan sugar 2/3 cups cocoa powder 3/4 cups margerine (mealted) 1 1/4 cups water 1 1/4 tsp baking powder 2 tbs vanilla extract 1/2 cup applesauce
-Preheat oven to 350 drgrees.
-Mix all ingredients together.
-Pour the mixture into either one 12"x9" pan or two 9" circular pans. Make sure to grease and flour the pans first!
-Bake for about 40-45 minutes.
Rhubarb Crisp
-Ingredient List #1-
3 cups chopped rhubarb 1 cup vegan sugar Ener-G equivilant to one egg (though I don't think omitting this would really change anything...) 2tbs flour 1/2 tbs apple pie spice
-Ingredient List #2-
1/3 cup brown sugar 1/4 cup margerine (mealted) 2/3 cup flour
-Directions-
-Pre-heat oven to 375 degrees.
-Mix all of the ingredients from the first list, and spread at the bottom of a large glass pan.
-In a seperate bowl, mix all of the ingredients from the second list, and crumble on top of the first mixture.
-Bake for approx. 25 minutes, until the rhubarb is soft.
-Serve while warm (though it tastes fine re-heated as well)
Sugar Cookies
Ingerdients
1 1/2 cups vegan powdered sugar 1 cup vegan margerine, softened 2 tbs vanilla extract 1/4 cup applesauce 2 1/2 cups flour (I usually use two cups whole wheat and 1/2 cup white) 1/2 tbs baking soda Regular vegan sugar
-Mix all of the ingredients, except the regular vegan sugar.
-Cover and refergirate for about an hour and a half to two hours.
-Preheat the oven to 375.
-Roll out to 1/4" thick on a lightly floured surface, and use cookie cutters to cut the dough.
-Place on a greased pan, and sprinkle with the regular sugar.
-Bake for seven to ten minutes, until edges begin to brown.
Chocolate Chip Cookies
Ingredients:
2 1/4 cup whole wheat flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup margarine (mealted) 1 1/2 cups brown sugar 2 teaspoon vanilla 2 cup semi-sweet chocolate chips
Directions:
-Preheat the oven to 375 degrees.
-Mix all of the ingredients in a bowl. Add the chocolate chips last.
-If the batter seems a bit dry, add a little bit of vanilla soymilk.
-Put the dough onto a greased cookie sheet. Make sure to leave a little space between each cookie, because they grow a lot when they bake.
-Bake for about 10 minutes, until the edges start to brown.
Gingerbread Cookies
Ingredients:
1/2 cup brown sugar 1/6 cup margerine (softened) 3/4 cups dark molasses 1/3 cup cold water 3 1/2 cups flour 2 tsp baking soda 2 tsp baking powder 1/2 tsp salt 1 tsp allspice 1 tsp cloves 1 tsp cinnamon
-Mix all of the ingredients.
-Cover and refergirate for about an hour and a half to two hours.
-Preheat the oven to 350.
-Roll out to 1/4" thick on a lightly floured surface, and use cookie cutters to cut the dough.
-Place on a greased pan, and bake for ten to twelve minutes, until you can touch the cookies without leaving an indentation.
Chocolate Cupcakes
(Note: This dosn't work well as a cake recipe... it tends to fall apart when you make it as a regular sized cake...)
Ingredients:
2tbs cocoa powder 1 1/2c whole wheat flour 1/2tsp salt 1tsp baking soda 1c brown sugar 2tsp vanilla extract 5tbs vegetable oil 1c water 1tsp apple cider vinegar (though regular vinegar should work as well...)
-Preheat the oven to 350 degrees (f)
-Mix all the dry ingredients together
-Stir in the wet ingredients
-Place the mixture into a cupcake pan.
-Bake for 25 minutes.
Tea Cookies
Ingredients:
2 cups whole wheat flour ½ cup brown sugar ½ cup powdered sugar 2 tbs. tea leaves, crushed to a fine powder ½ tsp salt ½ tbs. vanilla extract 1tsp water 1 cup margarine (melted)
Directions:
-Preheat the oven to 375 degrees (F).
-If your tea leaves are not already ground to a fine powder, crush them up with a mortar and pestle.
-Mix all of the ingredients together.
-Roll the dough to a long cylinder.
-Refrigerate the dough for at least30 minutes.
-Slice the dough into 1/3" thick pieces.
-Place the cookies onto a baking sheet lined with tin foil.
-Bake until the edges begin to brown (about 10 minutes).
Chocolate Cake Brownies
Ingredients:
¾ cups margarine (melted) 1¼ cups sugar ½ cup organic cocoa powder ½ cup applesauce ¾ cups whole wheat flour ¾ cups white flour 1 tsp baking powder ½ tsp baking soda 1 cup plain or vanilla soymilk 1 cup chopped walnuts Some sort of chocolate frosting
Directions:
-Preheat the oven to 350 degrees (f).
-Grease a 10”x15” glass pan.
-Mix margarine, applesauce, vanilla, cocoa powder, and sugar.
-Stir in the flour, baking powder, baking soda, and soymilk.
-Add the walnuts and stir until everything is well combined.
-Pour the batter into the greased pan, and make sure that the batter is sitting evenly throughout the pan.
-Bake until a wooden toothpick inserted in the center of the cake comes out clean. This will take between 25 and 35 minutes. It is recommended that you check on the cake after 20 minutes of baking, and continue to check on it every five minutes thereafter.
-Let the brownies cool completely (this may take up to three hours), then frost them and slice them.
Chocolate Walnut Biscotti As much as it had pained me to gnaw on the rock hard god-only-knows-how-old-it-was chocolate biscotti at Starbucks, I really missed the stuff after going vegan. After trying various recipes I finally came up with this. It tastes great, and doesn’t hurt my jaw as much as the biscotti from Starbucks did. The end result should be crispy and slightly dry, but not burnt or too hard to chew.
Ingredients:
½ cup margarine (softened) 2/3 cups sugar ¼ cup organic cocoa powder 2 tsp baking powder ½ cup applesauce 1 tsp vanilla extract 1¼ cups whole wheat flour ½ cup white flour 1 cup chopped walnuts
Directions:
-Preheat the oven to 375 degrees (f).
-Grease a cookie sheet and set aside.
-Beat the softened margarine with a fork until it has a creamy consistency. Stir in all of the ingredients, leaving the flour and walnuts for last.
-Shape the dough into two approximately 9” long rolls. Place these rolls about 3” apart on the greased cookie sheets and flatten them until they are about 3” to 4” wide and 1½” thick.
-Bake for 20 to 25 minutes, until a toothpick inserted in the center of the biscotti comes out clean.
-Let the biscotti cool completely, and remove it from the cookie sheet.
-Turn the oven down to 325 degrees (f).
-Re-grease the cookie sheet.
-Cut the long biscotti rolls into ½” strips.
-Place the biscotti strips on the cookie sheet, cut side down, and bake for about 7 minutes.
-Turn the biscotti over and bake for another 7 minutes.
Pancakes
Ingredients:
2 cups whole wheat flour ½ cup sugar 1 tsp baking powder 1 tsp baking soda 2 cups plain or vanilla soymilk 2 tbs oil 1 cup berries, chocolate chips, etc. (optional)
Directions:
-Mix all of the ingredients together.
-Place 2 to 3 tbs of batter into a greased skillet.
-When the center of the batter starts to bubble, flip the pancake. Cook until both sides are golden brown.
-Re-grease the skillet and repeat.
