I'm not too sure what you like, so I'll just list some of my favorites:
Honey and Clover - Romance/comedy/school life, I laughed and cried more with this anime than any other I can think of. It's just about a group of poor art students and their ups and downs in school, life and love. And oh god, Morita makes me laugh 'til it hurts.
Gankutsuou - The Count of Monte Cristo, told through the perspective of a minor character in the novel and with a futuristic, scifi spin. It really should be as awesome as it is, but, well, it is. It's artsy and dark and makes a wonderful classic story new and refreshing.
Le Chevalier D'eon - Please forget everything you ever learned in history about the real D'eon de Beaumont before watching this; it'll throw you off. That said, it's about a member of the secret police in France on the eve of the French Revolution. His sister Lia was recently found dead, and he's determined to find her killer. However, the deeper he looks into the mysterious events surrounding her death, the more bizarre things become...and the spirit of Lia starts possessing her brother's body to get her revenge. Lia's so cool for a dead girl. <3
Black Jack - A fairly new anime based on a very old manga series. It's about a surgeon who can perform 'miracles,' (hopeless cases, reattaching limbs, operating on himself with mirrors, all part of the job!) provided that his patients can afford the ridiculous cost of his services. He's unlicensed, and everything about him, from the strange scars on his body to the little girl who follows him around and works as his nurse, is a mystery to most people. He seems cold to most, but can be very kind to people who show real love and selflessness for others (he sometimes goes as far as to work on them for free.)
