This one isn't vegan but it is my favourite:
1/4 cup of fat free egg subsitute
2 portabello mushrooms
1/4 parmesan cheese
1/4 bread crumbs
Clean and slice the mushrooms about 1/4-1/2 an inch thick
(Anymore and I find they don't cook in the middle)
Spray a frying pan with cooking spray or 1tsp of olive oil and heat.
Pour egg subsitute in a saucer, then spread bread crumbs and cheese over a plate.
Dip the mushroom slices into the eggs then roll them around in the crumbs
until they are completely covered.
Put slices on frying pan and cook over medium heat until they are golden brown.
(you may have to re-spray the cooking pan after a while)
I like to use tomatoe sauce or sphagetti sauce as a dip when I eat them.
I also know a portabella chickpea burger recipe that I think it vegan
