Probably similar to human albinos, save for the eyes.
Assuming the coloration of the retina is entirely from blood, I believe the vulcan would have greenish colored eyes, since oxygenated blood would be of that color. However, it might be more of a dull greenish-brown if the retina has some pigmentation from some other source (melanin, photoreceptors, ganglion cells, etc.) beneath the first thin layer.
Now, I'm horrible at remembering things and I haven't seen an episode of the original series in years. It also does not help that the Next Generation has almost no vulcans. So I am probably wrong. =P
Oh yeah, and I'm sure it'd be the same with the skin.. you know, if there's any bit of pink/blue in a human albino, the vulcan would parallel with respective blood color.
But, is their deoxygenated blood blue like a human's? Or is their blood always green, regardless?
