I usually fill my onigiri with apples (for dessert) and tofu saute'd with spinach in chili oil and ginger, but does anyone have any suggestions?
I can't eat carrots or cucumbers sweatdrop otherwise I'd use that.

Onigiri is traditionally filled with either very salty or very sour ingridients. Here's how I make a 'refrigerator pickle' for my fillings:

Thinly slice some daikon radish. Put in a non-reactive container and cover the slices in vinager, with just a little salt. Let it sit in the fridge for at least a day. Dice up the slices, and use to fill onigiri! I usually do this with carrots and cucumber too, but... yeah. You could also stuff your onigiri with umeboshi, if you like them.

You could also mix-in an ingredient, and not stuff them. Scrambled eggs, green onions, olives, and finely chopped peanuts all work well.

Woah, I never thought of peanuts!
And I love umeboshi, but I can't buy much of anything around here.

I use raspberries. I get the frozen stuff, and mash it with rice and a little sugar. It's great for breakfast!

Onigiri fillings i use:
pickles
kimchi/radish
cream cheese (or vegan cream cheese)
frozen veggies
i also have some seasonings i got at an asian grocery store that i fill them with or sprinkle them with
it was suggested to me by one of my japanese friends to use japanese plum
fried potato
carmalized veggies


ive wanted to try curry, like make curry sauce, put it in the fridge to set and get thick, make a small ball and put that in it, and when you go to eat the rice ball heat it up a little bit. but i havent tried it yet.
also thought that seeds like sunflower seeds might be good to try.....

hope that helps, ive been working on some filling ideas cause i make rice balls for lunches and stuff... the cream cheese ones are awesome if you like it.
