Building my vegan skills from scratch

I'm looking for a few recipes to help me build my cooking skills. Some things that won't cost an arm and leg. Also looking for recipes to start my own personal vegan cookbook. Normally I cook for just little fat me and no one else. Also I have a strict $200 budget each month. All the help I can get is VERY MUCH appreciative! Thanks!

One of my go to recipes is curry. The trick is to heat up the pot, add a little oil, and fry things like onions and peppers a bit on the high heat. I always use curry paste (better than powder) and fry that up a bit as well. Then it gets some chopped tomato, coconut milk, and whatever else is going in (like potato or butternut squash). It simmers with the lid on until everything is tender. Sometimes I'll throw a bag of baby spinach in at the end. Just stirring it in wilts it enough.

Have u tried Eggplant Salad ? Its like grilled eggplant peeled then some apple cider vinegar, coconut milk and sugar then some other vegies can be added
