Hey, everyone! I think it's time we share our recipes or assemblies that are under 100 calories. I know we all have them!

Let me start off by offering a super simple assembly:

Cheesy Celery Bites - 41 Calories
Serves: 1
Time: Under 5 Minutes
Lacto-Vegetarian

Ingredients
  • 1 Celery Stalks (6 calories)
  • 1 Laughing Cow Light Cheese Wedge (35 calories)


Instructions
For the cheese wedge flavor, it's your choice. Just make sure it says "Light" on the case, and it'll add up to the right amount of calories.

Wash & dry the celery stalk, and spread cheese over it. Cut cheesy celery into bite-sized pieces. Enjoy!

Feta Cheese & Romaine Salad with Italian Dressing - 98 Calories
Serves: 1
Time: 15 Minutes
Lacto-Vegetarian

Ingredients
  • 4 Romaine Leaves, about 2.5 cups (25 calories)
  • 2 Tbs Athenos Crumbled Basil & Tomato Feta (45 calories)
  • 1/2 Tomato (13 calories)
  • Salt & Pepper, to taste (negligible calories)
  • 2 Tbs Wishbone OR Kraft Fat-Free Italian Dressing (15 calories)


Instructions
Wash and dry romaine leaves. Rip apart into bite-sized pieces and place in bowl. Season leaves with salt & pepper, according to preference (2 shakes of each, if you're unsure). Toss to distribute.

Wash and dry tomato. Dice one half, store the other. Add to romaine leaves in bowl.

Add 2 tablespoons of fat-free salad dressing into romaine & tomato bowl. Mix to combine.

Crumble a small handful of the feta cheese into smaller, more manageable pieces and measure into 2 tablespoons (1/8 of a cup, if you don't have measuring spoons). Place on top of salad & dressing.

Enjoy!

Baked Cinnamon "Apple Chips" - 82 Calories
Serves: 3
Time: 3 - 4 hours
Vegan + Vegetarian

Ingredients
  • 3 Tart Apples, like Granny Smith (240 calories total)
  • 1 + 1/2 Tbs Lemon Juice (6 calories total)
  • 1 Cup Water (negligible calories)
  • Cinnamon, Sprinkled (negligible calories)


Instructions
Mix lemon juice and water, and place into a bowl. This will be used to store the apple slices and keep them from turning brown before they are cooked.

Line a baking sheet with parchment paper, and place to the side of your work area.

Wash and dry apples. Core (and peel, if desired), and slice into thin circles using mandolin slicer. Place each new circle into lemon and water mixture (turn to coat).

Once all apples have been cored and sliced, and dipped in the lemon mixture, remove the apple slices. Press to dry on paper towels --- as dry as you can get them before they start to brown! Lightly sprinkle with cinnamon on each side. Place on cooking sheet.

Place cooking sheet with apples into oven, at lowest temperature setting (about 150°F to 170°F). Every 30 minutes, flip slices. If parchment paper is excessively wet, replace with new piece. Cook for about 2 hours (up to 3 hours, if needed) and remove from oven.

Place on wire cooling rack. They should dry a little bit more as they get cooler, so don't get too upset.

For an accurate serving size, count up the number of pieces you have, and divide by 3.

Virgin Mary Shrimp Mocktail wink - 78 Calories
Serves 2
Time: 10 minutes
Power Food (Shrimp), Vitamins

Ingrediants


* 22 ounces reduced-sodium V8
* 1 teaspoon horseradish
* 1 teaspoon Worcestershire sauce
* 1 tablespoon lemon juice
* 10 dashes Tabasco
* Freshly ground pepper, to taste
* Ice cubes
* 4 cooked shrimp

Instructions
Shake V8, horseradish, Worcestershire sauce, lemon juice, Tabasco, and pepper, if using, in a large glass jar with a tight-fitting lid. Fill two tall glasses with ice and divide the Bloody Mary between the glasses. Garnish each drink with 2 shrimp.

P.S. I changed the name, and the calorie count on the website seems more accurate for the drink without the vodka.

Totally swiped from TheSneakyChef.com, a website that urges you to sneak fruits and vegetables into otherwise unhealty dishes. Please also note that for this dish to be vegetarian, you must use animal-free sugar, like Domino brand.

Chocolate-Banana "Ice Cream" - 94 Calories
Serves: 2
Time: Under 5 Minutes
Lacto-Vegetarian

Ingredients
  • 1 Frozen Banana (121 calories)
  • 2Tbs Plain Low-Fat Yogurt (20 calories)
  • 1Tbs Organic Sugar (45 calories)
  • 1/2tsp Unsweetened Cocoa Powder (2 calories)


Instructions
Freeze banana in plastic bag overnight. When completely frozen, unpeel and cut into slices. Place banana slices and all other items in a food processor on a high setting to puree. Stop occassionally to scrape down sides. Split in half and enjoy!

Also, these can also probably make fudgesicles, if you refreeze the resulting mixture on a stick.

Homemade Onion Soup (Beef Version) - 88 Calories
Serves: 2
Time: 30 Minutes

Ingredients
  • 1/2 Yellow or Vidalia Onion (30 calories)
  • 1.5 Tbs Butter Alternative Spread (90 calories)
  • 2 Cups Reduced Sodium Beef Broth (30 calories)
  • 1/2 Packet Goya Beef Bouillon (25 Calories; Optional)


Instructions
Prepare non-stick sauce pan with butter spread on high heat. Peel and cut onion into thin rings and add to heated pan. Saute rings until browned and sweet. Turn down to medium heat. Feel free to mop up excess spread with clean paper towel or by adding and draining with clean hot water (there is more spread than necessary in this recipe because I do NOT like cleaning burnt bits).

Add in 2 cups of beef broth and Goya seasoning (optional). Let heat until broth is hot. Serve immediately. Makes an appetizer of about 1 cup of soup per person.

Enjoy! And try to avoid salty foods for awhile. xp
