Just made some yummy vegan peanut butter cookies and thought I'd share the recipe in case anyone would like it.
What you need:
1 3/4 cups all purpose flour
3/4 tsp baking soda
3/4 tsp salt
1 egg worth of egg replacer
2 Tbs water
1 1/4 cups firmly packed light brown sugar
3/4 cup peanut butter
1/2 cup non-dairy butter
3 Tbs non-dairy milk
1 Tbs vanilla extract
1/2 cup ground peanuts (optional)
How you do it:
-Preheat oven to 375F
-Line cookie sheets with parchment paper or use non-stick sheets
-In small bowl, combine the flour, baking soda, and salt. Set aside.
-Whip the egg replacer and water together until creamy.
-In large bowl, combine the brown sugar, peanut butter, butter, milk, and vanilla. Beat at medium speed until well blended.
-Add the flour mixture and ground peanuts and mix until well blended.
-Drop by rounded tablespoonfulls about two inches apart onto the cookie sheet. Flatten slightly with a fork for the signature criss-cross pattern.
-Bake 10-12 minutes or until set and just beginning to brown. Let them cool 3-5 minutes before moving to a wire rack.
