In need of fried tofu recipes

Does anyone know where to find a recipe for Chinese Ma Po Tofu (like the kind they make in P.F. Chang's)? The variations I keep finding look way different (not so fried, that is).

Also, if anyone's ever been to Noodles & Company, how do they prepare their tofu? With butter?

I believe the tofu is normally blanched first, then when it's frying in the wok they add tapioca starch, or corn starch.
