i have carpal tunnel which makes things like strength training and upper body workouts really difficult for me. does any body know any moves that tone the upper body without too much movement of the wrists?

Most work out machines are being used inneffectively if you're using your wrists really at all.
I had carpal tunnel syndrome while working at a bakery several years ago. I recommend weight lifting, using free weights. Carpal tunnel syndrome is caused/exacerbated by wrist movement, so weight lifting -- which requires you to keep your wrists straight and firm -- should be ideal. Just start with really small weights, like one to three pounds, and move up from there.
