This is one of my most favorite recipes. These are chinese pancakes, not the sweet fluffy breakfast variety. Very easy and fun to make!
Ingredients:
Equal Parts Flour & Cold Water
Green Onion
Vegetable Oil
Salt
Mix flour and *cold* water. The consistency should hold together like dough, but not at thick as bread dough. Somewhere between bread dough and cake batter.
Dust a flat surface with flour - you gonna be rolling dough, which can get sticky fast.
Take some of the dough and roll into a think squarish shape. Though should be roughly the size of a traditional breakfast pancake. Moisten the top of of the dough with vegetable oil. Sprinkle pieces of green onion and salt.
Then roll up the piece of dough into a cylinder shape - with the toppings inside.
Take the cylinder of dough and coil into a spiral - like a cinnamon roll.
Use a rolling pin or your hands to flatten the coil out into a pancake shape.
The result is a flat coiled cake, with the goodies protected inside.
Heat oil in a skillet and fry each side of the pancake until golden.
Eat 'em hot. Super yummy!
You can substitute any flavors you like for the green onions. Try sun dried tomatoes and basil for something different!
