I've always had a love hate relationship with salad dressing and of course salad... such as... I hate vinaigrettes... and balsamic for that matter... and I never saw the point of eating a salad if I slathered it with a cream based dressing...
When I worked at a lodge where we made our own salad dressings... I usually ate my salad with tzatziki on it.
BUT!
I was fiddling with this and decided I was in love.
Yummeh Avocado Dressing for the Salad-ly Impaired.
Or: YADSI Dressing
You will need:
An avocado. (duuuh. : D)
Lemon and lime juice. Probably around 3-4 tablespoons total.
A table spoon of Olive oil.
Salt to taste. (No more than 1/2 a tsp)
Water to thin it out as much as you like.
Mush up the avocado, and add the lemon and lime juices. Not only does this keep it green and lovely, but it packs a lot of taste into a little punch. The salt is to balance the lemonylimeyness.

This should be good for two or three salads, use it up in about a week and a half.
