Christmas Holiday Meal Ideas

Both of my parents are meat-eaters, but are sort of supportive of me making the switch to vegetarianism. To help out a bit, I'm planning on making the following dishes for Christmas dinner.

Green Bean Casserole

Cranberry Sauce

and for dessert

Oreo Crumble Cupcakes

Any other ideas for what I could make would be appreciated. Or if you have made these dishes before, let me know how they came out.

*edit* The Green bean casserole came out great, not as salty as it would have been if you were using mushroom soup for the sauce. The cranberry sauce also came out well. The cupcakes were a bit of a hassle, but they still came out great. The recipe actually makes around 40 cupcakes, instead of the 32 cupcakes it said it made.
