It's not pronounced that way TT_____TT
If it was, it would be written "Ukei" But it's not, there is no "i" or "y" sound in it at all. Uke is pronounced... hmm... well, japanese xD the "U" is very short as you said, like in "you" and the "ke" is pronounced like in the name "ken"
It's easier to understand if you actually hear it in Japanese though ^^;;

e are so similar it's not worth arguing over. That's why when translating the soft e in my name, it ends up an a in Japanese.
