I just made this for breakfast, and it was delish!!
also very fast and easy. smile
Ingredients:
1 large whole wheat tortilla
1/2 royal gala apple
1-2 large strawberries
1/2 a banana
1/2 tablespoon peanut butter (or more)
sugar and cinnamon, or pumkin spice to taste
vegan margarine
Core and halve the apple.
Cut the apple and strawberries into thin slices.
Layer half the apples and add a little sugar/cinnamon. Add a layer of strawberries, and top with more sugar/spice. Top with the remaining apples, and again top with the sugar/spice put a couple pieces of banana on top.
Spread a very thin layer of PB around the edge of the tortilla.
Fold two sides in and then fold the other two sides (to get a square). Spread some margarine on the folded side and press down in a frying pan over medium-low heat.
Spread margarine on the other side before you flip it over. Cook until both sides are nicely browned, about 5-7mins on each side.
You can even do this as a desert, just serve with vegan vanilla ice cream!
