Banana bread:
Ingredients:

1 3/4 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (Takes 2-3 Bananas)
1/2 cup vegetable Oil
equivalent of 2 eggs (I use about a cup of applsause for the 2 "eggs")
1/3 cup soy-buttermilk*

*To make buttermilk, combine 1 cup soymilk with 1 tablespoon of vinegar. This can be used on a 1:1 ratio with buttermilk, so 1/3 cup of this = 1/3 cup buttermilk.

Directions:

Preheat oven to 325 degrees F.

Mix flour, vegan sugar, baking soda and salt in a large mixing bowl.

Mix bananas, oil, and buttermilk* in a medium mixing bowl.

Combine the banana mixture with the large bowl containing dry ingredients, and stir well. Add the applesause or Ener-G Egg Replacer in now, and stir well again. (Optional: add 1/2 cup pecans).

Pour into a greased 9x5 inch bread pan.

Bake in 325 degree oven for 1 hour and 15 minutes, or until a toothpick in the middle comes out clean. Mine usually take about an hour, but for different elevations you might need more time.


I make this bread all the time for my friends and they never know it's vegan, they actuely think it's from a bakery. xD You can even add in about 1/2 cup of pecan pieces or vegan chocolate chips!

Serves: 10

Sugar cookies!

Ingredients:
1 1/2 cups powdered sugar
1 cup vegan margarine, softened
1 "egg" (I used 1/2 cup of applesauce)
1 teaspoon vanilla
1/2 teaspoon almond OR lemon extract
2 1/2 cups all-purpose OR wheat flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Frosting:
1 1/2 cup powdered sugar
1 teaspoon vanilla
2 tablespoons soy or rice milk

Directions:

Cookies: Mix powdered sugar, margarine, "egg" (prepared as per package directions), vanilla, and almond (or lemon) extract. Mix in flour, baking soda and cream of tartar. Cover and refrigerate at least 2 hours. Heat oven to 375 F. Divide dough into halves. Roll each half 3/8 in thick on lightly floured cloth-covered board. Cut into shapes. Place cookies on lightly greased sheet. Bake until edges are light brown, 7 to 8 minutes.

Frosting: Mix powdered sugar and vanilla. Stir in milk substitute until frosting is smooth and of spreading consistency.

They're really good!! And this recepie makes a lot of cookies. biggrin

Vegan Blueberry Muffins!

1 1/2 cups flour (185g)
3/4 cup "vegan" sugar (150g)
1/2 teaspoon salt (3g)
2 teaspoons baking powder (10g)
1/3 cup vegetable oil (80ml)
1 Ener-G Egg Replacer or 1/2 cup of applesauce
1/3 cup soymilk (80ml)
1 cup blueberries (145g)

CRUMB TOPPING:
1/4 cup sugar (50g)
1/8 cup (over full) flour (20g)
2 tablespoons soy margarine (30g)
3/4 teaspoons cinnamon (scan't 2g)

Preheat the oven to 400 degrees F (200C). Grease 12 muffin cups.

Combine 1 1/2 cups flour, 3/4 cups sugar, salt, and baking powder.

Make the Ener-G egg/applesauce.

Pour the vegetable oil into a 1 cup measuring cup, then add the egg and enough soymilk to fill the measuring cup. Add to dry ingredients and mix well.

Fold in blueberries, then place the batter into the greased muffin tin.

Crumb topping: Mix 1/4 cup sugar, 1/8 cup flour (overfill the 1/8 cup), margarine, and cinnamon until any large lumps are worked out. Sprinkle topping over muffin batter before baking.

Bake about 25 minutes, until the topping and the tops of the muffins are golden.

Makes 12 medium sized muffins.


These are sooo good.

I've been trying to find this recepie for a while.
And I just found it and they're my favorite cookies!


Oatmeal banana chocolate chip cookies:

Ingredients:
1/2 cup soy margarine
1/2 cup applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 ripe mashed banana
2-3 teaspoon vanilla
1 3/4 cup flour
1 teaspoon baking powder
2 1/2 cup rolled oats
1/2 cup vegan chocolate chips

Directions:

mix margarine, applesauce and both vegan sugars

add well-mashed banana and vanilla

add dry ingredients bit by bit while continuing to mix

scoop little spoonfuls onto greased cookie sheet

bake 375 degrees for 8-9 minutes, more for larger cookies

Quick and easy Cinnamon rolls. smile

Ingredients:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons vegan margarine -- I use Earth Balance
3/4 cup soy milk
2 tablespoons melted margarine
1/4 cup Sucanat
1 tablespoon ground cinnamon

Icing:
1 teaspoon margarine, softened
1 cup vegan powdered sugar
soy milk


Directions:
Mix dry ingredients first, then cut in margarine.

Mix in soy milk until dough is soft (you may need slightly more or less to get the dough to a workable consistency). Do not over mix!

Roll dough to 0.25 inch thickness (0.5 cm) in a long rectangle -- about 8 inch by 16 inch (16cm x 32 cm). Using a pastry brush, coat the rectangle of dough with the melted margarine. Then spread the Sucanat and cinnamon over it.

Roll from the long end, forming a tight roll. Cut rolls about 1 inch (2 cm) thick. Place on a lightly greased baking sheet (i made mine in a greased, medium sized ceramic bowl so they were softer) and bake at 450 degrees for 15 mins or until golden.

While rolls are baking, make icing by mixing margarine and powdered sugar. Slowly add soy milk to reach desired consistency. spread on rolls while they are still warm.

note: the rolls themselves are not sickeningly sweet, which makes for good contrast with the icing. compared to other cinnamon roll recipes, this one is extremely quick and easy, but still soft and tasty!

Microwave Chocolate cake!

3/4 cups flour
1/2 cup sugar
1/8 cup powdered sugar
1 tablespoon cocoa
1/4 teaspoon baking soda
pinch of salt
1/2 cup water
1/4 cup vegetable oil
1/2 tablespoon vinegar
1/2 teaspoon vanilla
about 1/2 cup bittersweet chocolate chips

Mix dry ingredients until thoroughly blended. Add liquids and stir to a light brown mixture.

Pour into greased 1 quart baking dish.

Add chocolate chips and microwave for 1 minute.

Stir in now melted chocolate.

Microwave for one more minute (or more depending on how your microwave works, mine usually takes about 3 minutes) and let sit until cool.



The microwaving doesn't hurt the taste at all.
You can try frosting it with nummy frosting!

i'm going to have to try that microwave chocolate cake. it just sounds to good and really simple to make in a dorm room, which is where i'll be come fall
