Does anyone know specifications and stats for the Starfleet ships? Or know of a book/website where I could find a complete list of them. (Would prefer them handed to me or a website because I'm too lazy to go and buy a book)

No 1 source has complete official stats for all the ships, and even the "official" sources have problems. (Like the Akira-class carrier's bay doors being too small to fit fighters thru them.)
A number of sites have SPECULATED stats for the ships. Thus, for example, Danube-class runabouts either have a top speed of Warp 4.7 or Warp 8. (Warp 4.7 was stated on DS9-with a maximum theoretical of Warp 5.0. Warp 8 was speculated based on the performance of the things-like trips to Earth and back from DS9.)

Thank you indeedy. And yes I have come to see that there are... inconsistencies with some of the things. For instance the sizes of actual ships one website said the Sovereign class was like half the size of a different ship.
Edit: I also found a website that had no information on the real ships but someone had made up like 40 different classes of ships and created history's, weapons, and stats for them.
