Hey, everyone! It's time we share our recipes or assemblies that are under 400 calories. I know we all have them!

Let me start off by offering a low-cholesterol, low-fat egg salad recipe:

Oversized Egg Salad Sandwich - 273 Calories
Serves: 1
Time: 15 Minutes
Ovo-Lacto Vegetarian
111mg Cholesterol, 9g Fat, 13g Protein, 3g Fiber

Ingredients
  • 1/2 Hardboiled Egg Yolk (27 calories)
  • 3 Hardboiled Egg Whites (48 calories)
  • 1/2 Tbs Mayonnaise (50 calories)
  • 1/2 Tbs Dijon Mustard (15 calories)
  • 1/8 tsp Old Bay Seasoning (negligible calories; optional)
  • 2 slices Sandwich Bread (120 calories)
  • 2 Romaine Lettuce Leaves (13 calories; optional)


Instructions
Shell eggs and cube/mush according to preference. Remove egg yolks but reserve 1/2 of one of the yolks for sauce. Place egg whites into mixing bowl, and place 1/2 of the yolk into a smaller mixing bowl.

Crumble egg yolk in smaller bowl with fork. Add 1/2 Tbs mayonnaise and 1/2 Tbs preferred Dijon mustard to bowl with egg yolk. Mix to combine.

Season egg whites with Old Bay seasoning (optional), and add mayo/mustard/yolk mixture to egg whites. This is your sandwich filling.

Obtain 2 pieces of bread. Wash & dry the lettuce and apply to one of the pieces of bread (optional). Add sandwich filling on to bread/lettuce. Enjoy!

Super-Sized Southwest Salad - 262 Calories
Serves: 1
Time: 45 Minutes

Ingredients
    Dressing
  • 3 Tbs Fat-Free Sour Cream (53 calories)
  • 1 tsp Low-Fat Mayonaise (15 calories)
  • 1 tsp Skim Milk (2 calories)
  • 2 Scallions (10 calories)
  • 1+ tsp Hot Sauce (3+ Calories)
  • 1 Tbs Lime Juice (4 calories)
  • Fresh Cracked Pepper (negligable calories, to taste)
  • Water (as needed; optional)

    Salad and Toppings
  • 2 Tbs Whole Kernal Corn (20 calories)
  • 2 Tbs Black Beans (20 calories)
  • 1/2 Red Bell Pepper (15 calories)
  • 5 Cups Romaine Lettuce (50 calories)
  • 1 Strip of Cooked Bacon (60 calories, optional)


Instructions
Make dressing by combining ingredients into a small bowl. Add hot sauce and pepper to taste, then add water if desired to create a less thick dressing.

Cut bell pepper into bite-sized pieces. Coat non-stick pan in a very light mist of cooking spray. Lightly sautee bell pepper pieces, black beans, and corn until most corn is lightly browned. Be careful, as corn will swell, and can shoot towards your face. biggrin Put aside and let cool.

Wash and dry lettuce, then tear into bite-sized pieces. Toss salad with dressing. Then, cumble bacon on top of lettuce and layer with pepper, bean, and corn mixture.

Serve and enjoy.

Beef & Rotini Skillet - 274 calories per 1 cup serving
Makes: about 6 servings
Total cook&prep time: 40 minutes

3/4 pound ground beef (85% lean)
1 small onion, chopped (about 1/4 cup)
1/2 teaspoon Italian seasoning or dried oregano leaves, crushed
1 can (10 3/4 ounces) Condensed Tomato Soup
1/4 cup water
1 cup frozen whole kernel corn
1/3 of a 1-pound package corkscrew-shaped pasta (rotini) (about 2 1/4 cups), cooked without salt and drained
1/4 cup grated Parmesan cheese

Cook the beef, onion and Italian seasoning in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

Stir the soup, water and corn in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the corn is tender. Stir in the pasta and cook until the mixture is hot and bubbling. Sprinkle with the cheese.
