hello, i just joined.
i wanted to share this recipe. n_n
i had tried cookies like this at a farmer's market
on a recent trip i just took...
so i searched and searched for a recipe similiar,
and i found one! (but i modified it a little)

(: very tasty.

no refined flour either!

heart ingredients

1/2 cup barley flour
1/4 cup spelt flour
1/2 tsp baking powder
1/2 cup sunflower seeds
1/4 cup hemp nut seeds
1/4 cup pumpkin seeds
1/4 cup of raisins (i used cherry flavoured raisins!)
4 tbsp carob chips
1/8 tsp salt
2 tbsp ground flax
1/4 cup maple syrup
2 1/2 tbsp soy milk
1 tbsp blackstrap molasses
1 tsp vanilla
2 tbsp olive oil

heart directions

1) preheat oven to 350 degrees F, and prepare parchment paper onto 1 cookie sheet.

2) in a large bowl, combine all the dry ingredients (but NOT the ground flax)

3) in a medium bowl, combine the flax, maple syrup and milk. stir.

4) add the molasses, vanilla and oil to the wet mixture and stir again.

5) add the wet mixture into the large bowl of dry ingredients and mix together until everything is even.

6) drop cookies onto parchment paper, and press / shape gently with a fork.

* i used 1 1/2 spoonfuls (using a tbsp serving spoon, not a measuring spoon) and the recipe made 12 cookies.

* if you want the cookies to be a little more, add 2 spoonfuls for a cookie, and the recipe will end up making around 10 cookies.

7) bake for 10-12 minutes.

heart basic nutritional info

(i didn't bother to calculate too much)

based on 12 cookies (so 1/12th the recipe)

172 calories
6.2g of fat per cookie.

** if you have a bulk barn near you,
you can find everything there, also in organic options. (:

otherwise, everything can be found at a wholefoods store and such.

probably. (:
is there another kind of dried fruit you like though?
or dried berry.
i would try that instead if there is something you like,
just chop it up.

if not, make up for it by adding just a little extra of one other ingredient.

:'D experimenting is always fun.
