I'm working on pulling together a 3rd generation team. I want to do all the Eeveelutions, but I don't know what to round it out with. Below are my current spreads. Any advice would be really appreciated. Thanks!

Also, I know none of my spreads have Hidden Power. I know it's a good move. I just don't know how to get the right type when breeding.

Umbreon
Nature: Bold (+Defense, -Attack)
EV: 252 HP, 129 Defense, 129 Sp. Defense
Mean Look
Baton Pass
Faint Attack/Toxic
Wish

Espeon
Nature: Timid (+ Speed, - Attack)
EV: 252 Sp. Attack, 252 Speed, 6 HP
Psychic
Morning Sun
Calm Mind
Bite

Jolteon
Nature: Timid (+ Speed, - Attack)
EV: 252 Sp. Attack, 252 Speed, 6 HP
Thunder Wave
Thunderbolt
Double Team/Substitute
Baton Pass

Vaporeon
Nature: Modest (+ Sp. Attack, - Attack)
EV: 252 Sp. Attack, 252 HP, 6 Defense
Surf
Ice Beam
Substitute/Haze
Baton Pass

Flareon
Nature: Naughty (+ Attack, - Sp. Defense)
EV: 252 Attack, 252 HP, 6 Speed
Overheat/Flamethrower
Shadow Ball
Return
Iron Tail

For Flareon, go with flamethrower. Overheat is a good attack but it lowers your stats and only has less pp than flamethrower. That's all I have to say. Love your choices for your team. 3nodding

EV: 252 HP, 129 Defense, 129 Sp. Defense
Mean Look
Baton Pass
Faint Attack/Toxic
Wish
Wow...this is one of the better Umbreon sets I've seen in a while. Most people prefer Toxic to Faint Attack as Umbreon is usually screwed against Steel and Poison Types anyway.

Espeon
Nature: Timid (+ Speed, - Attack)
EV: 252 Sp. Attack, 252 Speed, 6 HP
Psychic
Morning Sun
Calm Mind
Bite
Ah, classic Espeon; it was a tyrant back in its day. Unfortunately its day was about 8 years ago after the release of Gold and Silver. It should hold up just fine though, and is sure to tear through teams after a couple Calm Mind boosts, too bad you can't pass them on though.

Jolteon
Nature: Timid (+ Speed, - Attack)
EV: 252 Sp. Attack, 252 Speed, 6 HP
Thunder Wave
Thunderbolt
Double Team/Substitute
Baton Pass
If this is for In-Game Emerald, then go with Double Team. If not, go with Substitute. Most people refuse to play against a DT spammer, and with good reason; do you know how frustrating it is to miss 6 times in a row and watch your team be taken out by a DT spammer?

Vaporeon
Nature: Modest (+ Sp. Attack, - Attack)
EV: 252 Sp. Attack, 252 HP, 6 Defense
Surf
Ice Beam
Substitute/Haze
Baton Pass
Hmm...I see Baton Pass, but where is the Bold nature? Where's the Acid Armor?

Flareon
Nature: Naughty (+ Attack, - Sp. Defense)
EV: 252 Attack, 252 HP, 6 Speed
Overheat/Flamethrower
Shadow Ball
Return
Iron Tail
My vote goes to Overheat for two reasons: 1. 55 base power higher than Flamethrower and 2. Its Special attack sucks. I don't think it's going to be out on the field for extended periods of time, so the after-affect shouldn't even come into play that often.

Thanks for the advice! I'm not sure whether I'll use Overheat or Flamethrower, but I'm leaning towards Overheat. The only reason it's there is for STAB, so the Special Attack loss won't bug me too much. And if it does, there's always White Herb.

So, how should I change Vaporeon? Make it more of a tank? And do you know what job my sixth Pokemon should have to round out my team?

Why not; Espeon's already covering as both a tank and a sweeper and Umbreon's working as a darn good wall. Your team needs just a little physical defense.

3rd gen is sortof a mix between 2nd and 4th; not as fast as 4th, but far from as slow as 2nd. A "bulky water" that can pass its defense buffs to a teamate would be incredibly helpful.

A really strong physical sweeper would fit in this team quite nicely. Preferably something that is immune to your teams current weakness: Earthquake.

Might I recommend a Choice-banded Salamance?

Yeah, I see what you mean about the physical defense. The reason I thought Substitute might work is because Vaporeon has naturally high HP.

Salamence seems like a good fit. He's got a great movepool to cover weaknesses. I never thought about Choice Band, but it seems to be good for a sweeper like Salamence.
