I gave my tau all black with enchanted blue for some plasma reject on the gun tips and a light/dark brown mix on the legs and chest for a mud effect, finishing it with brown ink. Vehicles got the same brown mix on the vehicle engines. I also used normal weathering techniques to make them look all beat up.

As for a sinister tau? You would want red on black, but darken the red with some inks and dry brushing. Also make the tau look very battle hardened. Depending on the theme, chaos alterations, or wounds would do nicely.
