- I just made these & my omnivore family devoured the whole batch within less than a day. Even my sister loved them who in the past would not eat anything containing vegan margarine or soy milk. :]]
This recipe makes about 45 cookies. If you want, you can add 1/2 teaspoon of ground nutmeg or allspice to the cinnamon sugar to boost the flavor.
COOKIE DOUGH:
1 & 3/4 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1 stick [4 ounces] vegan margarine, softened
[If you have vegan margarine in a tub, microwave for a few seconds to soften it, and use 8 tablespoons.]
3/4 cup sugar
1/4 cup vanilla soy milk
1 teaspoon vanilla extract
CINNAMON SUGAR:
1/2 cup sugar
3 tablespoons ground cinnamon
1. Preheat oven to 350 degrees. Coat a baking sheet with cooking spray.
2. Whisk together the flour, cornstarch, and baking powder in a bowl.
3. In a separate bowl, beat the margarine with an electric mixer until soft. Add the sugar and beat until fluffy. Beat in the soy milk and vanilla extract 30 seconds or until smooth. Add the flour mixture and beat 30 seconds or until smooth.
4. On a large plate, combine the cinnamon and sugar.
5. Shape the dough into 1-inch balls. Roll each ball in the cinnamon-sugar and place 1 & 1/2 inches apart on the prepared baking sheet. Bake 10-12 minutes - or until the cookies look dry on the tops and are lightly browned on the bottoms. Transfer to a wire rack to cool.
