Well, my beloved books of 1 - Harry Potter 2 - The Hobbit (technically part of LotR) 3 - Artemis Fowl 4 - Bartimaeus trilogy 5 - Death Gate Cycle 6 - Eragon 7 - Gaurdians of Time have been mentioned already, so let me see what else I can come up with.
8 - The Adept by Katherine Kurz and Deborah Harris One of my all-time favourites, but it isn't for everyone. It's about Scottish psychics and incorperates a great quantity of history and theology. There are a few supernatural confrontations, of course, but if you like LOTS of batle scenes, and are bored by psychological and mystical analysis, then this isn't for you.
9 - Liveship Traders trilogy by Robn Hobb Many of you seem to like her other works, so make this next on your list! It has a spoiled king, an ambitious pirate, a cross-dressing merchant's daughter, an enslaved priest, and ships with gossiping figureheads.
10 - 'Wolf' series by Jane Lindskold Animals are confused by the human behaviour of competing for a throne and using magic to control their children....It's really complicated and I don't quite know how to summarise it.

My favorite fantasies:
1-Watership Down, Redwall, and anything by David Clement-Davies 2-The Curse of Chalion (and the sequel, Paladin of Souls, and the Hallowed Hunt, all by Lois McMaster Bujold) 3-Dragonlance (the first two trilogies, the Raistlin Chronicles, and anything in the series with Raistlin as a main character.) 4-Amelia Atwater Rhodes' The Keisha'ra and vampire stories 5-the Twilight series.
I also like Eragon, Artemis Fowl, and Harry Potter, of course.
I am so glad I'm not the only one who has read Firebringer and The Sight! heart heart heart
