I think I’ve got an answer for the Teflon question: I just learned that in order for Teflon to be applied, the metal pan must first be sandblasted. A primer coat of Teflon is applied, and the metal is baked. As it’s baking, the Teflon isn’t baked into the metal necessarily, but the plastic has trouble getting out of the various nooks and crannies that were from the metal being sandblasted earlier. From there, a finishing layer of Teflon is applied and baked onto the primed surface. Teflon has no trouble polymerizing with itself, so this layer bonds to the prepared pan without any problem.
