It is a term that is used to describe things that actually occur in the anime/manga... like saying Syaorin/Sakura is canon, that means it is a pairing that actually occurs...

under these circumstances, it is believed that they are going to make Fai/Kurogane canon, or "real" in terms of the Tsubasa-world

I've heard this rumor and read the transcript for the interview where it supposedly happened. It didn't. It was, once again, neither confirmed nor denied. Darnit.

Spoiler, though: Fai is now a vampire completely dependent on Kurogane for blood, as of Chapitre 125. How can you say it's not canon?End spolier.
