Let me start off by offering a low-cholesterol, low-fat egg salad recipe:

Oversized Egg Salad Sandwich - 273 Calories
Serves: 1
Time: 15 Minutes
Ovo-Lacto Vegetarian

Ingredients
Instructions
Shell eggs and cube/mush according to preference. Remove egg yolks but reserve 1/2 of one of the yolks for sauce. Place egg whites into mixing bowl, and place 1/2 of the yolk into a smaller mixing bowl.
Crumble egg yolk in smaller bowl with fork. Add 1/2 Tbs mayonnaise and 1/2 Tbs preferred Dijon mustard to bowl with egg yolk. Mix to combine.
Season egg whites with Old Bay seasoning (optional), and add mayo/mustard/yolk mixture to egg whites. This is your sandwich filling.
Obtain 2 pieces of bread. Wash & dry the lettuce and apply to one of the pieces of bread (optional). Add sandwich filling on to bread/lettuce. Enjoy!
