You don't have to give up pancakes to be vegan- just alter the nonvegan recipe! This should make about 4 pancakes:
*1 cup flour (1/2 WW, 1/2 unbleached white)
*1 1/4 cup soymilk (or whatever other type of nondairy milk you want to use)
*about 1/2 tsp. baking powder
*about 1/4 tsp. salt
*1 tsp. sugar
*2-3 tbsp. vegetable oil
*a drop of vanilla
cook like any regular pancake. this has been tested, and it's pretty good for vegan food
